When it comes to homemade healthy snacks, these are definitely one of my favourites! I love energy / protein balls, because they taste great whilst also being super easy to make. This recipe is so cheap per serving, with only 4 simple ingredients. There is also no added sugar, as the dates give a naturally very sweet flavour and binding texture.
The ingredients you will need are:
- 100g dates
- 25g cacoa powder (or nibs)
- 15g coconut flakes
- 1 tbsp coconut oil
Alternatively you can use peanut butter for the binding ingredient instead of coconut oil, however it will make them stickier and you may require freezing them slightly before serving/storing.
To create the balls yourself, blend up all of the ingredients and then roll into shape. If you compact the mixture together before rolling it will make them much more solid ready for serving. I coated some of them as you can see with coconut flakes just for added taste, but toppings can be completely your choice!!
